Easter Recipe: Mini Carrot Cupcakes

 Cupcakes are the perfect treat to bring to any Easter celebration. We all know that bunnies love carrots, so it's only fitting to make carrot cupcakes this Easter! Check out this delicious Easter recipe for homemade mini carrot cupcakes. Also, frosting and decorating the cupcakes is a fun activity to do with your kids!
Ingredients:
  •  4 eggs
  •  2 cups flour
  •  3 tsp baking powder
  •  1 tsp salt
  •  3/4 cup vegetable oil
  •  1 ½ cup sugar
  •  2 tsp vanilla extract
  •  2 2/3 cup shredded carrots
  •  1 container of frosting in your favorite flavor
  •  1 bag Cadbury mini chocolate Easter eggs
Directions:
 Combine flour, baking powder, and salt in a medium-sized bowl and mix well. In a separate large bowl, mix the eggs, vegetable oil, vanilla extract, and sugar. Add the flour mixture and carrots to the large bowl and mix well. Pour the mix into mini muffin pans. Bake at 350F degrees for about 15 minutes or until the cupcakes are cooked. Once the cupcakes have cooled, frost and decorate each of them with a few mini chocolate Easter eggs, jelly beans, or peeps.
 Note that usually carrot cake is topped with a cream cheese frosting. You can use this type of frosting if you'd like, however, you can also use chocolate frosting to look like a nest with your eggs. Or, you can put some green food coloring with vanilla frosting to look like grass, which is also appropriate this time of year for an Easter celebration.
