Plan Your Magical Menu

Choose some Colombian favorites for your menu. Many delicious recipes feature Queso (Cheese), Corn, Fish, Plantain, and wonderfully rich Latin spices. Here are a couple of simple, popular dishes that you can add to your party menu:

Colombian Arepas

These cheesy fried flatbreads are usually served for breakfast, as a side dish, or even for a quick meal.

Ingredients
  • 1 cup warm water
  • 1 cup pre-cooked white cornmeal (such as P.A.N.®)
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon butter
  • ½ teaspoon salt, or to taste
  • cooking spray
Instructions
  • Step 1
    Mix water, cornmeal, mozzarella cheese, butter, and salt together in a large bowl. Knead until mixed well and the dough has a soft consistency. Form balls the size of a medium orange and place them between 2 sheets of plastic wrap. Flatten with a rolling pin to your desired thickness.
  • Step 2
    Cut the dough into circles (about 3" diameter) using a biscuit cutter, cereal bowl, or even a drinking glass, lip-down, through the plastic wrap. Remove the plastic wrap and remove excess dough.
  • Step 3
    Coat a griddle with cooking spray and heat to medium-high. Add arepas and grill until golden brown, about 5 minutes per side. 
Patacones (Green Plantains) 

Savory fried green plantains served as a simple, but delicious, side dish! 

Ingredients
  • 2 green plantains
  • kosher or sea salt (to sprinkle over plantains)
  • 4 tablespoons oil (canola, avocado, or similar for frying)
Instructions
  • Slit the tips of the plantains on both ends. Then wrap them in wet paper or clean cloth towels and microwave on high for about 4-5 minutes. Then let them rest, still wrapped for another 5 minutes. Once they are cool enough to handle, unwrap the plantains. 
  • Pull them out of their skins, and slice them into rounds about 1/2-inch thick. A few at a time, place the pieces between two cutting boards (or use a clean mallet) and smash them into thin slices. Then lightly salt them.
  • Heat the oil in a large, heavy pan until it is quite hot but not smoking. Add about half of the plantain slices, lower the heat, and cook them for 4 minutes, turning halfway through. They should be lightly browned when done. Drain on paper towels
  • While still warm, set out patacones and toppings such as salsa or guacamole for everyone to put on the patacones. 
Don't forget the Colombian Coffee! For the children, we recommend some delicious cupcakes, perhaps served with a taste of coffee-flavored ice cream instead!

Celebrate Family

Once you've watched the movie with the children, help them create their own family tree to celebrate the magic of their own family. Use colored paper or crayons to paint a beautiful tree, and draw the branches to represent each of the members of your family. For even more fun - have them name the "gift" that each of the family members possesses - like grandma's enchanting baking or grandpa's magical green thumb!
