Super Bowl Dessert: Goal Post Cupcakes

Looking for an easy Super Bowl dessert for your party? Cupcakes are a nice treat to serve at a Super Bowl party. During the excitement of the game, it is often easiest to eat finger foods, and this theory holds true for dessert as well. Take inspiration from the yellow goal posts to make these delicious goal post cupcakes.

Ingredients:

  • 1 package chocolate cupcake mix
  • 1 container (16 oz.) vanilla frosting
  • 24 baking cups
  • Green food coloring
  • 48 small pretzel rods
  • 1 ½ cups white chocolate chips
  • 1 bag (14 oz.) shredded coconut
  • 1 bag chocolate covered almonds
  • 1 tube white food gel

Directions:

Mix cupcake batter following the directions on the box (note: you'll also need vegetable oil and a couple eggs). Spoon the batter into 24 baking cups. Once the cupcakes are done baking, let them cool for 30 minutes.

In the meantime, add the green food coloring to the frosting and to the coconut. Frost the cupcakes, then roll them in coconut (this will be your grass field).

Set aside 24 pretzel rods for the base of each goal post. Cut the remaining sticks into three 1 inch pieces. Then, melt the white chocolate chips following the package directions. Dip the edge of the goal post base pretzel into the melted white chocolate and then attach it to the middle of one of the smaller pretzel pieces so that it is perpendicular. The two pretzel pieces should now look like the letter “T.” Dip each edge of the smaller pretzel piece into the white chocolate and attach the remaining two smaller pretzel pieces to the edges. The pretzels should now look like a goal post. Place them on wax paper to dry and repeat for the remaining pretzels. Once the pretzel goal posts have cooled, carefully peel them from the wax paper and insert them in the top of each cupcake.

Laslty, take the chocolate covered almonds and make a few white "stitch" marks with the white food gel to make it look like a football. Place the chocolate football on the top of cupcake for the finishing touch!
