Mardi Gras Food

A big part of any Fat Tuesday celebration is the Mardi Gras food! New Orleans is famous for their Cajun and Creole cuisine so it only makes sense to incorporate some of the city's famous dishes into your Mardi Gras food menu. Here are a few Mardi Gras recipes that are full of New Orleans flavor! 
Crawfish Spread: This recipe is a great appetizer for your Mardi Gras party. Shrimp can also be substituted for the crawfish depending on your taste and preferences.
Ingredients:
  • 1 package (16 oz.) frozen cooked crawfish tails (thawed and chopped)
  • 1 package (8 oz.) cream cheese
  • 1 medium green pepper (finely chopped)
  • 1 medium sweet red pepper (finely chopped)
  • 6 garlic gloves (minced)
  • ½ teaspoon Creole seasoning
  • ½ teaspoon salt
  • 6 to 12 drops hot pepper sauce
Directions:
In a small bowl, mix the cream cheese until it is smooth. Add the crawfish, peppers, onion, garlic, Creole seasoning, salt, and hot pepper sauce. Cover and refrigerate for 2 hours. Serve with assorted crackers or chips. 
Shrimp and Crab Gumbo: Gumbo is a famous Creole dish and a perfect Mardi Gras party food!
Ingredients:
  • ½ cup oil
  • ¾ cup flour
  • 1 large onion (chopped)
  • 1 bell pepper (chopped)
  • 3 ribs celery (chopped)
  • 4 gloves garlic (minced)
  • 1 lb fresh okra (trimmed and sliced)
  • 1 gallon shrimp stock
  • 1 tsp thyme
  • 3 lbs medium shrimp (peeled and deveined)
  • 2 lbs fresh lump crab meat
  • 6 cups white rice
  • Salt, black pepper, and cayenne pepper to taste
Directions: 
Heat the oil in a large pot on the stove. Add the flour and stir constantly until it is a light brown color. Add the vegetables and continue to stir. When the vegetables are tender, add the stock, salt, and peppers. Stir until the flour is dissolved and simmer over low heat for one hour. Add the shrimp and crab meat about five minutes before serving. Cook over low heat until the shrimp is pink in color. Serve in large bowls over rice.
Yam Bisquits: This popular Cajun country dish is a great addition to your Mardi Gras menu. The recipe below is quick and easy and can be made many ingredients already found in your kitchen.
Ingredients:
  • ¼ cup skim milk
  • 3 tbs. margarine (softened)
  • ½ tsp. ground cinnamon
  • 4 cups all purpose baking mix
  • 1 15 oz. can yams (drained and mashed)
Directions: 
Combine the yams, baking mix, and cinnamon in a bowl and mix. Add the milk and cinnamon to the bowl and continue to stir until well blended. Roll the dough out onto a floured surface to a one inch thickness. Cut with a 2-inch cutter a place onto a baking sheet. Bake at 450 degrees for 10 minutes until golden brown.
