Irish Soda Bread Cookies: These cookies are as easy to eat as they are to make, which is why this Irish cookie the perfect dessert to serve at any St. Patrick’s Day party.
Ingredients:
- 2 cups all-purpose flour
- 3/4 cup white sugar
- 1/2 teaspoon baking soda
- 1/2 cup butter
- 1/2 cup currants
- 1/4 cup buttermilk
- 1 egg
- 1/4 teaspoon salt
- 1 teaspoon caraway seed
Directions:
Preheat oven to 350 degrees Fahrenheit. While your oven is heating, combine the flour, baking soda, sugar, and salt in a mixing bowl. In a mixing blender, add in the butter slowly until mixture resembles coarse meal. Then, stir in currants. Mix in one beaten egg. Pour in milk and mix with a spoon until it forms dough. Once you dough is prepared, shape it into a ball and knead lightly on a floured surface. Roll out dough to 1/4 inch thick and cut into squares and triangles with a knife. You can get even more creative and use shamrock cookie cutters. Finally, bake the cookies for 12 to 14 minutes or until slightly browned. Let cool completely before serving.

Blarney Bars: These bars are a traditional Irish treat and are a fabulous dessert to make in honor of St. Patrick’s Day. The recipe yields about 36 bars and is perfect for a large crowd.
Ingredients:
- 1/2 cup butter softened
- 3/4 cup brown Sugar
- 2 eggs
- 1 Tbs. milk
- 1 tsp. vanilla extract
- 3/4 cup flour
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 3/4 cup quick-cooking Oats
- 3/4 cup toffee Pieces
- 1/3 cup chopped pecans
- Green food coloring
- ¾ of can of vanilla frosting
Directions:
Pre-heat your oven to 350 degrees Fahrenheit and lightly grease a 9-inch square-baking pan. Next, in a mixing bowl, combine the softened butter and the brown sugar. Then, blend in the eggs one at a time. Once the eggs are blended, add the milk and vanilla extract. Sift in the flour, baking powder, and salt. Add the quick-cooking oats and gently fold in the toffee bits. Add the pecans, and blend the mixture well with a spoon. Spread the mixture in the prepared baking pan. Bake for about 25 minutes, or until a toothpick may be cleanly removed from the center of the bars. Cool in the baking pan on a wire rack. Meanwhile, prepare the frosting by blending together the green food coloring and vanilla frosting. When the bars are completely cooled, spread the frosting over the bars and then cut them into squares to serve.

Irish Cream Cake: Irish Cream Cake is the ultimate St. Patrick’s Day dessert! It will undoubtedly get all of your guests in the Irish spirit after they try it. You can also make a chocolate version, just substitute the vanilla cake and vanilla pudding with chocolate mixes.
Ingredients:
- 1 package yellow cake mix
- 1 package instant vanilla pudding mix
- 4 eggs
- 1/4 cup water
- 1/2 cup vegetable oil
- 3/4 cup Irish cream liqueur
- 1/2 cup butter
- 1/4 cup water
- 1 cup white sugar
- 1/4 cup Irish cream liqueur
Directions:
Preheat oven to 325 degrees Fahrenheit and grease a 10-inch Bundt pan. In a large bowl, combine cake mix and pudding mix. Mix in eggs, water, oil, and cup Irish cream liqueur. Beat for 5 minutes at high speed. Pour batter in greased pan. Bake in for 60 minutes, or until a toothpick inserted comes out clean. Let cool for 10 minutes in the pan, then invert onto the serving dish. While your cake is cooling prepare the glaze. To do this, combine butter, 1/4 cup water and 1 cup sugar in a sauce pan. Bring to a boil and continue boiling for 5 minutes, stirring constantly. Remove from heat and stir in 1/4 cup Irish cream. Next, spoon the glaze over top and the sides of cake, allowing the cake to absorb the glaze until all of the glaze is used up. Serve and enjoy!
